  • 1kg/2lb 4oz clean strawberries, laundered, hulled and dried
  • 1 lime, juice only
  • 1kg/2lb 4oz jam sugars

Technique

When the strawberries are huge, cut them by 50 percent. Place the berries and fresh lemon juice into a large pan. Temperature for a couple a few minutes to soften, put the sugars and stir over a low heat up until the sugar has dissolved.
